The Experience

Istanbul to Cappadocia starts with a morning flight, and by afternoon you're walking through Rose Valley—a 4-kilometer hike past red rock formations and cave dwellings carved by Christians in the 5th century. The colors shift as the light moves, and the valley opens onto views that change depending on when you arrive. That same day you'll descend into Kaymakli Underground City, where tunnels and rooms carved by the Hittites and later used as shelter during Roman persecution still feel like a working settlement. You sleep in a cave suite hotel in Göreme, which sounds stranger than it is—the rooms are warm, the breakfast is solid, and you wake up looking at the same fairy chimneys you walked past the day before.

Day two moves north through Cappadocia. The Göreme Open Air Museum holds churches and monasteries carved into the rock between the 10th and 13th centuries, their walls still painted with frescoes. You'll pass through Devrent Valley, where the erosion has left behind mushroom-shaped rocks and pillars that look like they were sculpted by hand, and stop at Monks Valley to see the three-headed fairy chimneys with a chapel built into one of them. Then a flight to Izmir, and you're in Kusadasi by evening, a coastal town where the hotel sits by the sea. You'll also visit the House of the Virgin Mary, a modest stone building near Ephesus that pilgrims have visited for centuries, and the Temple of Artemis, one of the Seven Wonders of the Ancient World, now reduced to a single column and scattered stone. The Isa Bey Mosque, built in 1375, shows the shift from Seljuk to Ottoman architecture. You return to Kusadasi for another night by the water.

Pamukkale on the final day is the part people talk about afterward. The white travertine terraces cascade down the mountainside like frozen waterfalls, and you can walk across them and swim in the thermal pools. The water stays at 36°C year-round, mineral-rich and warm. Cleopatra's Pool—the Antique Pool—lets you float among submerged Roman columns that fell during an earthquake centuries ago. Above it, Hierapolis holds the ruins of a spa city that's been drawing visitors for thousands of years: the Grand Theatre, the Temple of Apollo, the Necropolis.
