The experience
You start with a visit to a bustling local market in Sousse, where you'll handpick fresh ingredients and learn how to spot the spices and herbs that define Tunisian cooking. The chef walks you through the stalls, sharing stories about the dishes you'll make and how locals choose what goes into them. This is not a tour of the market. You're shopping for real, selecting the exact tomatoes, peppers, chickpeas and harissa that will go into your lunch.
Back at the grandmother's home, you move into the kitchen for a step-by-step cooking session. You'll prepare several dishes: brik (thin pastry stuffed with egg, tuna and capers), couscous with sauce, slata mechouia (grilled salad), lablabi (chickpea stew), and a tagine. The chef guides you through each one, teaching the techniques you can recreate at home. Vegetarian, vegan and gluten-free versions are available if you request them when you book. The kitchen is where the cultural stories behind each dish come out, not as a lecture, but woven into the work of making them.
Once everything is cooked, you sit down with the other participants and eat the meal you've prepared, served with traditional Tunisian tea or coffee and fresh fruit. A private vehicle brings you back to your hotel at the end, so you leave with new recipes, the muscle memory of making them, and the flavors still on your tongue.
