The Experience
The market tour hits you first if you book the morning session — the noise, the smell of galangal and kaffir lime leaves stacked in wooden crates, vendors calling out prices in Thai while you're still figuring out which end of a lemongrass stalk to use. Your guide walks you through the stalls, pointing out the ingredients you'll actually cook with in a few hours, and you start to understand why the same dish tastes different depending on where the basil came from. It's not romantic, it's just how it works.
Back at the Blue Elephant Sathorn cooking school in Bangkok, you get a herbal drink and a towel — you'll need both — and then you're in the kitchen with maybe a dozen other people, all of you standing at your own station with a chef nearby. The menu changes daily: Monday might be Laab Kai and Tom Yum Koong, Tuesday could be Yum Ma Khue Muang and Kaeng Pa, and so on through the week.
