What’s the experience like?

The first thing I noticed was the quiet clink of glasses echoing off old stone walls — not loud, just enough to make you look up. We found Tristan waiting by the door, tall and cheerful, a little bit Dutch in his smile. He handed us a chilled aperitif (crisp and citrusy, I think he said it was from Rueda?) and asked how we’d ended up in Valencia. I mumbled something about chasing sun and good food — he laughed, said that’s what brought him too.

The room smelled faintly of toasted bread and something floral — maybe the wine? As we sat around the table, Tristan started pouring the first of five Spanish wines. Each glass came with a story: why this grape grows better near Alicante, or how Rioja tastes different when you drink it with Manchego. He didn’t rush; sometimes he’d pause mid-sentence to let us guess a flavor. I totally missed “green pepper” in one red — still don’t taste it.
