Design a gin recipe and distill it yourself on a copper still

A hands-on gin-making class in Edinburgh where you design a bespoke recipe, distill 500ml on an individual mini copper still, and bottle your own gin to take home. The three-hour workshop includes a welcome gin and tonic, three spirit tastings, a cocktail while your gin distills, and guidance from a live English-speaking instructor. Minimum age 18.

The Experience

You arrive at a micro distillery room and settle in with a gin and tonic while the instructor walks through the day ahead. Then you taste three different gin profiles to understand how botanicals and base spirits shape the final flavour. From there, you design your own recipe using the available ingredients—the choice is yours, and the instructor helps you think through what you want the gin to taste like when it's done.

Each guest gets their own mini copper still. You load your chosen botanicals and spirit, fire it up, and watch the distillation happen. While your gin is running through the still, you step back with a cocktail in hand. Once the distillation finishes, you taste your newly made gin straight from the still before you bottle it, design a label, name your creation, and seal it with wax. You leave with a 500ml bottle that you made yourself.

The workshop runs three hours and is built around small groups—each person works on their own still rather than watching from the side. The instructor is there throughout, and the whole thing is structured so you're making something real, not just learning about it. You'll understand how a micro distillery actually works by the time you walk out.
