The morning air in Lisbon was still cool when our driver pulled up outside our hotel—right on time, Mercedes gleaming. We set off for Évora, winding through Alentejo’s open countryside. Our first real stop was the Chapel of Bones. I’ll admit, nothing quite prepares you for it. The Cathedral is impossible to miss—its towers rise above everything else in town. Climbing up to the roof was worth every step; you get this wide-open view across red-tiled rooftops and out toward the plains. Our guide pointed out how you can spot Spain on a clear day (it wasn’t quite clear enough for us). Before heading back to Lisbon, we had time for a quick pastel de nata at a tiny bakery tucked behind the main square—still warm from the oven.
