The day starts in Évora, where you walk the historic center and visit the Roman Temple, the Évora Cathedral and the Capela dos Ossos: a 16th-century chapel lined with the bones of thousands. Monsaraz sits on a ridge overlooking the Alentejo plains, its narrow streets and castle walls unchanged for centuries. From there, the route leads to the winery, a 750-year-old estate in the region's heart.

At Herdade do Esporão, you tour the vineyards, the kitchen gardens and the ampelographic field, where the winery maintains its collection of grape varieties. Then you move to the cellars for a tasting of four Alentejo wines: white, red and rosé, paired with regional products so you understand how the wines are made and what sets each one apart. The tasting is subject to cellar availability, so booking in advance is essential. Your guide stays with your group throughout, which means you can ask questions and shape the day around what interests you most.
