The Experience

“Try to guess which one’s Geisha,” said Carlos, grinning as he handed us two tiny cups. We were standing under the shade of a guava tree on his family’s farm in Palmira, Boquete, and honestly, I had no idea — but the smell was wild, almost floral. The morning was cool but sticky, and the air buzzed with birdsong and the faint clack of someone sorting beans nearby. I thought I knew what fresh coffee tasted like before this day trip from Boquete, but turns out I didn’t know much at all.

Carlos showed us how to pick the cherries — not too green, not too dark — and my hands got stained red after just a few minutes. He laughed when I tried to pronounce “pilon” (I still can’t say it right), then let me pound some beans myself. That stick is heavier than it looks! There’s something about feeling the beans change under your hands that makes you pay attention; it’s messier than you’d think, and my shirt still smelled faintly sweet hours later.

After we’d sorted through our little pile (with plenty of help), we roasted a batch on a machine just for our group. The room filled up with this nutty warmth that made everyone go quiet for a second — except for Carlos’ aunt who kept fussing over our technique. When we finally sat down to taste everything — including the famous Geisha coffee — I was surprised by how different each cup felt in my mouth. Some sharp, some almost syrupy. Hard to explain unless you’re there with your hands wrapped around the mug and the mountain mist drifting in through the window. I still think about that last sip sometimes.
