The experience

The tasting centers on five indigenous Macedonian wines you won't find in shops, each paired with a course built around it. You start with a Traditional Method bubbly made from Stanushina grapes, served with homemade prawn pate and brioche. The progression moves through Bela Voda Terroir Zilavka with aubergine Baba Ganoush, then Barrel Fermented Chardonnay alongside bisque risotto with prawns. The main course offers your choice of flatiron steak, minced rib-eye or salmon steak, paired with Organic Vranec, or Chardonnay if you choose the fish. Dessert closes with chocolate souffle and late harvest Vranec, or apple dessert with Temjanika.

Each wine glass holds 0.1 liters, sized for tasting rather than drinking, so the focus stays on the balance between wine and food across the three hours. The menu emphasizes locally produced indigenous varieties, and the pairing is designed around what each wine needs to show its character. If you choose the salmon option, the wine can swap to Chardonnay to match the lighter protein.

What’s included

Five glasses of wine (0.1 liters each) paired with five premium tasting dishes: prawn pate with brioche, aubergine Baba Ganoush, bisque risotto with prawns, a choice of steak or salmon main course, and chocolate souffle or apple dessert.
