The Experience

I almost chickened out of trying to pronounce “pastilla” at the market in Tangier—Li laughed so hard she nearly dropped the mint. Our guide, Youssef, had already introduced us to Sanae (his wife and apparently local chef legend), and somehow I was suddenly haggling for cinnamon in a swirl of voices and colors. The market’s air is thick with cumin and something sweet I still can’t name. It’s busy but not overwhelming; people nod or call out, but nobody rushes you. We picked out lemons that felt cool in my palm, soft bunches of coriander, almonds that looked dusty but tasted like sunshine. I didn’t expect to enjoy shopping for ingredients this much.

The cooking part was pure chaos—in the best way. Sanae showed us how to layer the pastry for pastilla (I tore mine twice; she just smiled and fixed it), and we took turns stirring tagine while steam fogged up my glasses. There’s this moment when the bread comes out of the oven—hot, yeasty, almost grassy from the flour—and everyone just goes quiet for a second before tearing off pieces. Lunch was all five dishes spread across the table: chicken tagine sharp with lemon, couscous royal dotted with caramelized onions and raisins, meatballs in tomato sauce, that flaky pastilla dusted with cinnamon sugar. Mint tea poured high into little glasses that steamed up my nose. I ate too much but didn’t regret it.

Afterwards we wandered the Medina’s tangled alleys—Youssef pointing out Berber pharmacy jars full of mysterious powders (“for headaches…or heartbreaks,” he winked). The city outside is louder now: scooters buzzing past blue doors, kids playing football against ancient walls. The van tour zipped us up to Cap Spartel where Atlantic meets Mediterranean (windy enough to steal your hat), then caves echoing with our footsteps. And yes, there was a camel ride—awkward at first but surprisingly peaceful once you stop worrying about falling off. By drop-off back at our hotel I felt like I’d lived about three days in one.
