Cook tagine in a local kitchen, not watch from a stool

A private cooking class in Chefchaouen where you learn to make tagine, zaalouk, tektouka and other Moroccan dishes in your host Fatima's home, then sit down to eat lunch together. The class runs four hours, includes a market visit to pick vegetables and spices, and covers both meat and vegetarian versions of each dish. Pickup is included. Children from age 10 are welcome.

The experience

You start by going to the local market with Fatima to select the vegetables and spices for the day's cooking. This is where you learn what makes Chefchaouen's diet different, which produce is seasonal, which spices carry the region's flavor, and how a Moroccan kitchen thinks about building a meal. Back in her home, you cook alongside her, learning the techniques for tagine (the slow-braised stew that defines the cuisine), zaalouk (a cooked salad of aubergine and tomatoes), and tektouka (a pepper and tomato dish). She explains every step and the reasoning behind it, so you can remake these dishes at home.

Lunch is what you've cooked, eaten together in her home. If you're vegetarian, the class adapts: the same techniques work for all the vegetable dishes, and Fatima builds the menu around what you want to learn. After lunch, you prepare mint tea the traditional way and finish the afternoon with it, tasting the flavors you've worked with all morning.

Is this one for you?You cook the dishes yourself in a private home, not watch a demonstration in a classroom or restaurant kitchen. This suits anyone who wants to learn the techniques hands-on and take the skills home, and works especially well for small groups or families traveling together, since the class is tailored to what you want to make.
