The Experience

Someone’s handing me a cold bottle of tamarind soda before I’ve even kicked off my sandals. That’s how the day starts at Xahuayxol — just this tiny group of us (I counted maybe twenty people?) and a stretch of pale sand that feels like it belongs to nobody but the sea. Our driver had pointed out the name on a faded sign, “garden in the sea,” he said, which is what Xahuayxol means in Mayan. I tried repeating it and got a laugh from Ana, who runs the kitchen here.
