The experience
The class opens with an introduction to cocoa and the different types of chocolate made in the workshop. You'll taste 100% pure cocoa, bitter chocolate, semi-bitter chocolate, traditional Oaxacan chocolate, and chocolate blended with chili pepper and spices: up to 10 samples total. Each tasting builds on the last, so you understand how ingredients and technique change the flavor.
After tasting, you choose one or two drinks to learn how to make. The instructor shows you how to prepare it using traditional ceramic vessels and the methods Oaxacans use at home. You'll leave knowing how to recreate that drink yourself, and you take home mini chocolate bars from the workshop. A live guide leads the class in English or Spanish.
