We were already elbow-deep in masa when Chef Alberto grinned and said, “Don’t worry, tortillas never come out perfect the first time.” I looked at my lopsided circle and shrugged—everyone around the table laughed, even the shy couple from Guadalajara. The kitchen smelled like roasted chiles and something sweet I couldn’t quite place. There was music playing softly—cumbia, I think—and sunlight coming through the window made everything look a bit golden. It felt like we’d wandered into someone’s family lunch by accident.

I didn’t expect to get so into grinding salsa in the molcajete, but there’s something about that stone bowl—heavy, rough, almost grounding. Alberto told us stories about his grandmother’s mole recipe while we chopped poblanos for rajas with cream.
