I remember the scent of ripe mangoes mixing with fresh cilantro as our guide, Luis, pointed out which chilies give ceviche its kick. We squeezed past stalls stacked high with limes and avocados—one vendor even let us try a slice of jicama sprinkled with chili powder. You’ll notice the tortilla factory just down the block; the hum of the machine and the warm smell of corn tortillas drifting out onto the street is something I still think about.
After picking up our ingredients, we headed to the chef’s home—a breezy spot tucked away from the main road. The kitchen was bright, sunlight bouncing off colorful tiles. We chopped onions for guacamole (yes, tears were shed), learned how to “cook” fish in lime juice for ceviche, and got tips on balancing flavors in fish soup. The coconut shrimp was my favorite—crunchy outside, sweet inside, dipped in a tangy mango sauce that’s honestly addictive. Menus change daily; ours had pescada a la talla grilled over charcoal, smoky and spicy.
Once we finished cooking, everyone gathered around a big table for lunch. There was laughter, clinking glasses, and a little friendly debate about who made the best guac. The tequila and mezcal tasting came next—our host explained how to spot good mezcal by its smoky aroma (and yes, it does warm you up fast).
