The Experience

I never thought coconut milk could smell this good. We’d just started our Malaysian cooking class in Kuala Lumpur and Fizah, our host, was already laughing at how much I kept sniffing the rice pot. She said that’s the real sign you’re hungry for Nasi Lemak — which, apparently, is Malaysia’s national dish and not just something you find in fancy hotels. I’d only ever had it from street stalls before. Making it myself felt weirdly personal, like I was borrowing someone’s family secret for an afternoon.

We chopped shallots and pounded chili paste while Fizah told stories about her grandmother’s kitchen — she didn’t measure anything either, just tossed in handfuls of this or that. The kitchen windows were open so you could hear scooters buzzing by outside, and there was this mix of turmeric and frying onions in the air that clung to my shirt (not complaining). At one point I tried to say “kuih ketayap” properly and everyone cracked up — Malay words are trickier than they look. The whole thing felt relaxed, not like a class at all.

By the time we sat down to eat what we’d cooked — Nasi Lemak with all the sides, plus curry laksa and some sweet kuih for dessert — I realized I hadn’t checked my phone once. There’s something grounding about eating food you made yourself in someone else’s home. Fizah handed us recipe cards at the end but honestly, it’s her laughter and those little tips (“don’t rush the sambal!”) that stuck with me most. Even now when I make rice back home, I try to get that same coconut smell going — still chasing it.
