The Experience

The studio sits within walking distance of Osaka Castle—about twenty minutes on foot—and is reachable in five to ten minutes from Tenmanguji, Minamisorimaichi or Tenmabashi stations, so you can slot it into a morning or afternoon around other sightseeing. You'll work with Japanese wheat flour specially made for ramen, rolling and cutting noodles by hand until they're chewy and ready to cook. The instructor walks you through each stage in English, so experience doesn't matter; the class welcomes children from age six.

Next you'll prepare chashu—tender, juicy pork simmered in the studio's original broth—and then pick your soup base from three options: Tonkotsu, Shoyu or Miso, each one based on recipes from well-known ramen shops. Once everything is ready, you sit down and eat the ramen you just made. The studio's walls are decorated with ramen and Japanese motifs, and the entrance features a glass door crafted over a hundred years ago using a technique that no longer exists; the staff point out other cultural details as you work, and you'll leave with a souvenir to take home.
