A pasta cooking class in Turin where you make traditional Genoese pasta by hand -- tagliatelle, tagliolini, croxetti and gnocchi -- then eat it at a reserved table in the trattoria with local wine and sauce included. The Experience
You start with all the ingredients ready and your hands in the dough. The kneading is the part most people remember -- it's tactile and it settles both children and adults into the work. Over the next hour and a half, you'll learn to shape rustic tagliatelle with a knife the old way, roll tagliolini, press croxetti in an artisan mold, and form smooth and lined gnocchi. The space around you holds antique pasta tools hung like a museum collection, and the guide talks through each shape and the stories behind them. Photographs happen naturally as you work.
Once the pasta is ready, you move to the best table in the trattoria -- it's already reserved for you. The pasta comes out seasoned with traditional sauces, and local wine and water are poured. This is the moment the class builds toward: tasting what your hands made, sitting down with whoever came with you, the work on the plate. A diploma arrives at the end, and so does a printed recipe with all the ingredients and the secrets, so you can make the same pasta at home.
The guide speaks English, Spanish, Italian or French, and the trattoria is set up for families and groups. Children from age 6 can participate, and the space is wheelchair accessible. Public transportation runs nearby if you're not driving.
