The experience
The class happens in a Cesarina's home. That's what Cesarine calls their network of home cooks across Italy who open their kitchens to travelers. Your host teaches you to roll sfoglia (fresh pasta) by hand, then guides you through making two different pasta types from scratch. You work alongside up to 11 other people, so it stays small enough that everyone gets hands-on time and real instruction, not just watching a demo.
After the pasta, you move on to tiramisu. The whole thing takes three hours. You start with an Italian aperitivo (prosecco and nibbles) to settle in, then cook, then taste everything you've made. Water, wine and coffee come with it, so you're not stopping to hunt for a drink.
The Cesarina teaches in English or Italian depending on the group. Public transportation runs near the home, so you don't need a car to get there.
