The experience
You arrive at a carefully selected home in the Lake Garda area and start with an Italian aperitivo (prosecco and nibbles) the way a family would. Then your Cesarina (the host's name in the network) walks you through rolling 'sfoglia', the fresh pasta dough, by hand. You'll make two pasta types from that dough (choose from ravioli, gnocchi, bigoli or tagliatelle), and learn the sauces that go with them. The whole class runs three hours, and the group stays under twelve people.
After the pasta, you move on to tiramisu, building the layers and learning why the coffee-soaked ladyfingers matter. Everything you make gets plated and tasted at the table with water, wine and coffee included. Cesarine are home cooks who open their own kitchens to travelers. The point is to cook the way they do at home, not to perform for a class. You leave with the recipes and the muscle memory of how the dough should feel.
