The experience

You've got an afternoon free in Florence and no restaurant reservations. This tour starts with an aperitivo and views of the city, then moves through four stops where you taste your way into what locals actually eat. A guide who knows the neighborhood takes you to places that don't rely on tourist traffic: the kind where Florentines still go. You'll taste cheese and 30-year-aged balsamic vinegar while the guide walks you through how it's made and why the age matters. Then comes Florentine street food: crostini loaded with local spreads.

The centerpiece is a sit-down dinner at a restaurant where you eat fresh pasta made that day, topped with fresh truffles, followed by Florentine steak. Wine or a Negroni comes with each tasting throughout the tour. It's included and it keeps flowing. By the time you reach the last stop, you've eaten the equivalent of a four-course meal and you're standing in a gelato shop learning how to tell the real thing from the places that pump in air and food coloring. If gelato isn't your finish, fresh cannoli is there instead.
