Step-by-step itinerary
Visit vinegar factory and tasting
- Enter historic vinegar factory
- Explore ancient barrels and production
- Learn balsamic vinegar production process
- Enjoy light lunch with local foods
- Guided tasting of 8 balsamic vinegars
The experience
The factory itself is the centerpiece. You enter a working production space where wooden barrels sit in different stages of aging, and the guide walks you through how balsamic vinegar moves from cooking the must through years of barrel storage. The barrels are ancient (some have been in use for generations), and the scents shift as you move through the rooms. You'll learn the methods passed down over time and what makes each batch distinct, without any of the polish of a museum. This is where the vinegar actually gets made.
Halfway through, you sit down to eat. The lunch is light but built around the region's staples: Parmigiano Reggiano that has aged either 24 or 30 months, focaccia baked fresh that morning, and a spread of cold cuts typical to Emilia. It's the kind of meal that tastes simple until you realize how much care went into each piece. Bottled water is included.
The tasting comes last. Eight different balsamic vinegars, each one distinct in color, age and flavor profile, are presented one by one. The guide teaches you how to recognize the differences between them, how to pick up the aromatic layers, and which ones work best with which foods. By the end you've tasted your way through the range of what the factory produces.
