“Try this,” our guide said, handing me a piece of knaffeh still warm from the tray. The sweet cheese stretched as I bit in, and I could hear the chatter of vendors drifting from the nearby market. We’d started our Galilee food tour early, just as the sun was warming up the hills—perfect timing to catch the bakery’s first batch of baklava before it disappeared.

Later on, we met a family who runs a small goat cheese dairy tucked away behind rows of olive trees. Their youngest son showed us how they make their award-winning cheese—he even let us taste a slice straight from the mold. The air smelled faintly grassy and sharp from the goats nearby, and I remember how proud they looked explaining their process.

We stopped at an old flour mill where pitta bread came out of a wood-fired oven, edges crisp and smoky.
