The experience

What makes Kerala cooking different is the balance of six tastes on the tongue (sweet, spice, sour, bitter, salty, and astringent) built into every dish. The class starts with an introduction to Kerala cuisine and how Ayurvedic principles shape what you eat every day. You'll see how the guide selects ingredients, then move through a live demonstration before you take over the knife and chopping board yourself. The menu rotates through banana fry (pazham pori), a traditional snack made with banana and maida flour; Kerala traditional meals built on those six tastes; and payasam, the milk-and-lentil dessert that closes a Kerala meal.

You spend time in local vegetable, meat, spice and fruit markets to understand where these ingredients come from and how to choose them. The hands-on cooking happens in a real kitchen with apron, knife, chopping board and other accessories provided. After you finish cooking, you sit down to eat what you made as lunch. The guide stays with you through a Q&A session so you can ask about techniques, substitutions or the stories behind the dishes, then wraps up with feedback on what you've learned.

The class runs four hours and is wheelchair accessible. Public transportation options are nearby. A live guide speaks English, Hindi, Tamil or Malayalam, so you can book in the language you're most comfortable with. Infants and small children can come in a pram or stroller, and specialized infant seats are available if needed.
