You’ll step inside a real Delhi kitchen, learn to cook four classic Indian dishes plus three types of bread with a local chef guiding you every step. Taste what you make over lunch, swap stories at the table, and leave with recipes—and maybe some new confidence in your spice skills.
I walked into the Delhi apartment and instantly got hit by the smell of toasted cumin — not the kind you get from a jar back home, but something deeper, almost smoky. Our host, Priya, smiled and handed me a glass of sweet lime juice (so needed after the traffic outside). There were already little bowls of turmeric and cardamom set out on the counter. I didn’t expect to feel this at home so quickly — maybe it was the way Priya laughed when I tried to pronounce “palak paneer” (I definitely butchered it).
We got right into making butter chicken — she showed us how to coax flavor out of the spices before adding anything else. The sizzle was louder than I thought it’d be. She explained why every family’s biryani tastes different (“It’s all about your hand with the masala,” she said). We kneaded dough for naan and chapati; my first one came out lopsided but nobody cared. The kitchen windows were open and you could hear street vendors calling out somewhere below. It felt like being part of someone’s real life for a bit.
The best part? Eating together at her table, passing dishes around while she told us how her grandmother made aloo gobhi differently (“More ginger, less chili”). I still think about that creamy paneer and how much better it tasted because we’d made it ourselves. Recipes came printed out so I could try again at home, though honestly I’m not sure mine will ever taste quite like hers. Maybe that’s okay.
