The Experience

The chef doesn't wait for you to settle in before she starts talking about lamination. She's already got the dough out, and she's showing someone how to feel the difference between a fold that's too tight and one that's just right. You're standing at a wooden counter in a Paris baking studio, and within five minutes you understand why croissant-making isn't something you can learn from a video. She hands you a piece of dough and says, "Now you try" — and suddenly your hands know things your brain didn't know it needed to know.
