The Experience

"So, who’s ready for their first G&T?" That’s how our guide, Emma, kicked things off at the Sipsmith Distillery in west London. I’d barely shrugged off my jacket before she handed me a cold glass — you could smell the juniper even before the first sip. The place itself feels tucked away, almost secret behind these old brick walls. There’s this quiet hum from the copper stills (Prudence, Patience, Verity — yes, they all have names) and you can actually feel the warmth coming off them if you stand close enough. I didn’t expect it to be so… homey? Not sure that’s the word but it wasn’t some big factory vibe.

Emma told us about gin’s wild history in London — apparently there was a time when you could pay your rent in gin? She made it sound both hilarious and a little tragic. We wandered around the distillery floor as she explained how Sipsmith became the first new copper pot distillery here since 1820. There was this moment where she let us run our hands over one of the stills (careful, it’s warm), and I remember thinking how much work goes into every bottle. The air smelled sharp and sweet at once — like citrus peels and something floral I couldn’t quite name.

The tasting part was honestly my favorite (no surprise). Four samples lined up in little glasses — each one different. My favorite was this limited batch they only make for their “Sipping Society” members; tasted almost like marmalade on toast, which sounds odd but trust me. Someone tried to guess all the botanicals and got maybe half right; everyone laughed, including Emma. We finished with another surprise pour before heading out into the evening with a little gift bag clinking in my hand. I still think about that last sip sometimes when I walk past a gin bar back home.
