The experience
The distillers who own Chief's Son run this tasting themselves, so you get the full story of how their whisky is made and why it tastes the way it does. You'll taste their core range (The Tanist, Standard, Pure Malt and Sweet Peat) side by side with new make spirit (what comes off the still before aging) and cask strength whisky straight from the barrel. The comparison shows you exactly what maturation does to the spirit, which most tastings skip. A curated local cheese board pairs with each pour, and one cheese has been washed in whisky.
You get to climb onto the still platform, peer inside the copper, and breathe in the smell of the distillery at work. Then comes the part people remember: using a thief (a long tube the distillers use to sample casks). You draw cask strength whisky directly from a barrel. As long as you don't spill it, you fill a 100ml bottle to take home. It's the only whisky you'll taste that day that hasn't been diluted or bottled yet.
