The experience

The first thing I noticed stepping out in Coffin Bay was the salty air: brighter somehow, maybe because it carried that cold ocean smell. We met our guide near Port Lincoln (he joked he’d been shucking oysters longer than I’ve been alive) and set off down the coast. The drive was short but I kept staring at the water, so blue it looked fake. On the boat, he handed me an oyster straight from the bay. It was cold and briny, almost sweet, nothing like what I’d had back home. He showed us how to shuck them without stabbing ourselves (I still managed to slip), and someone popped open a bottle of sparkling. Not sure if it was the sea or the wine but I felt lighter after that.

If you do the longer cruise (we did), you get these waders and actually walk right into the bay among the oyster beds. The water was freezing at first but then you just laugh about it: one of those things you don’t expect to enjoy until you’re there, standing ankle-deep in clear water with seagulls yelling overhead. Our guide pointed out little islands and told stories about storms that once swept through here. Dolphins showed up for maybe five seconds. Just enough for everyone to gasp and fumble for their phones.

Lunch at Oyster HQ was loud and cheerful, with plates of seafood coming out fast: local prawns, fish, more oysters (of course). There’s this view over the bay where everything slows down for a minute. Someone at another table ordered something in a thick accent. Staff just smiled and nodded like they’d seen every kind of visitor here. Later we stopped at Boston Bay Wines outside Port Lincoln: the wind picked up so much my hair whipped everywhere while we tried Shiraz overlooking all that rough southern ocean. The whole day felt like it belonged to this part of Australia: raw but friendly, never too tidy.
