The experience
We were barely out of Ho Chi Minh City when our guide, Linh, started pointing out the tiny rivers and houses made from palm leaves: honestly, I’d never realized how quickly the city faded into something quieter. Linh told us about her childhood in a village nearby, laughing about how she used to sneak mangoes from her neighbor’s tree (she swore the old man still remembers). The van was cool and smelled faintly of jasmine tea, or maybe that was just me hoping for caffeine. Either way, it felt like we were already somewhere else.
I didn’t expect to get my hands sticky so early in the day. At the rice paper village, an older woman named Mai showed us how to swirl the batter onto hot cloth. I tried and mine looked more like a pancake accident than anything you’d wrap spring rolls with. Mai just grinned and handed me another scoop.
