"You will see things that don't exist anywhere else on Earth," our guide told us before we left the Göreme office that first morning, and he wasn't overstating it. The 2-day Cappadocia tour from Istanbul starts with a one-hour domestic flight — you get picked up from your Istanbul hotel early, fly into Cappadocia, and by 9:30 you're already descending into the Derinkuyu underground city, eight levels of carved stone where entire communities once lived. The air down there is cool and still, and the passages are narrow enough that you have to duck. After that, the tour moves through Love Valley for photos, then into the Ihlara Valley where you hike past Byzantine cave churches carved straight into the cliffs before lunch.

The second day is when the landscape really gets strange. You start at Uçhisar Castle — a natural rock fortress with views across the whole region — then move to the Göreme Open Air Museum, where churches and monasteries are built into the volcanic stone itself. There's a pottery demonstration in Avanos where you can try the wheel, and then Devrent Valley, where the rock formations look like animals and mushrooms. The Selime Monastery on day one shows you how monks actually lived in these caves, carving out sleeping quarters and storage rooms from the stone. Between the two days you stay in a cave hotel in Göreme — not a gimmick, but a real room carved into the rock with a bed, bathroom and breakfast included. The whole thing wraps with a flight back to Istanbul and a transfer to your hotel.

The optional hot air balloon ride happens early on day two if you book it separately — you'd float above the fairy chimneys at sunrise, which is the image everyone has of Cappadocia. The tour itself doesn't require it, but the guide can help arrange it.
