The Experience

You arrive at a beautiful old wine cellar in Slovakia and settle in while the lights are still on. A sommelier gives a short introduction, then gradually dims the room until it goes completely dark. That's when the tasting begins. Seven wines—each one poured into your glass without you seeing the color, the label or even the pour—arrive one at a time. Without sight to guide you, your nose and palate have to do the work alone. You learn to identify aromas and flavors that usually hide behind what you see, and the sommelier walks you through the technique of tasting properly: how to smell, how to let the wine sit on your tongue, what to listen for in the sensations that come next.

The wines come from across Slovakia, including varieties the cellar has spent forty years developing—grapes bred specifically for this country's climate and soil. Some of these same wines were served to royal families and on the first-class deck of the Titanic. Tasting them blind strips away the prejudice your brain normally carries into the glass: you're not influenced by price, label, color or reputation, only by what's actually there.
