The Experience
The first thing I remember is the sharp smell of kopi drifting out from a tiny shop in Katong—our guide, Li, waving us over with a grin and two kaya toasts balanced in one hand. We’d barely started the Singapore food tour and already my shirt was sticking to my back (humidity here is no joke), but that didn’t matter. Li handed me a cup and said, “You have to stir it first.” I did, and the sugar hit before the bitterness—somehow both comforting and totally new. The street outside was noisy, scooters weaving past old shophouses painted blue and pink.
We wandered through Katong’s narrow lanes, trying chewy kuehs that stuck to my teeth (Li laughed when I tried to say “ondeh ondeh”—I definitely butchered it). Then it was onto Old Airport Road Hawker Centre. The air inside was thick with frying oil and chatter; every table packed with families slurping noodles or sharing plates of popiah. I lost count after the fifth tasting—laksa, Hokkien mee, something crunchy called carrot cake that isn’t cake at all. I liked watching the hawkers work: fast hands, quick nods, not much talking but somehow everyone knew what to do.
Kampong Glam felt different—quieter under the gold domes of Sultan Mosque. We ate murtabak so hot I burned my tongue (worth it), washed down with teh tarik poured from a height by a man who winked at me when I tried to film him. By then the sun had shifted and everything looked softer, like someone turned down the brightness on the city. Our last stop was Little India: dosa as long as my arm, sweet milky chai, and bright marigolds everywhere. A woman showed us how to eat with our right hand only—I still think about that moment when I try it at home.
