The Experience

By the time we reached Tekka Centre in Little India, the air was already thick with cardamom and frying dough — I think my shirt still smells faintly of spices. Our guide, Li, waved us over to a stall where she ordered something called vadai (I tried to pronounce it; Li laughed and shook her head). The first bite was hot and a little crunchy, with this unexpected hit of green chili. I glanced around and realized everyone at the table had that same look — surprise and maybe a bit of delight. We’d only just started but I could tell this wasn’t going to be one of those tours where you just tick off boxes.

Kampong Glam came next, with its gold-domed Sultan Mosque glinting in the sun. Haji Lane was loud with murals and shopkeepers chatting in Malay — someone was playing old pop music from a tinny speaker. There was this moment near the Spice Garden when our guide cracked open some dried cloves for us to smell; it was sharp and sweet at the same time, kind of earthy. I’m not sure why but that scent stuck with me more than anything else that day. Lunch happened somewhere between Jalan Besar’s shophouses and Muscat Street — satay skewers so smoky you could taste the charcoal before you even bit down.

Chinatown felt busier somehow, like everything sped up as soon as we crossed over. The Buddha Tooth Relic Temple loomed ahead but honestly I was more focused on the hawker stalls at Maxwell Food Centre — Li insisted we try Hainanese chicken rice (“If you don’t eat this in Singapore,” she said, “you didn’t really visit.”). She wasn’t wrong. The rice tasted like it had been cooked in broth for hours; there’s nothing fancy about it but it makes sense why people line up for a plate. We wandered through Ann Siang Hill after that, bellies full and moving slower than before.

I didn’t expect to feel so connected to Singapore’s history just by eating my way through these neighborhoods. It wasn’t just about food — though nine tastings is no joke — but about seeing how people live here now: families shopping for groceries at wet markets, uncles sipping kopi in plastic chairs, kids darting between tables. Five hours went fast. Sometimes I still think about that first mouthful of vadai or the way Chinatown smelled right before lunch — like ginger and rain mixed together somehow.
