The Experience

The first thing that hit me was the smell—yeasty and buttery—when we stepped into this old family bakery tucked behind a tram stop in De Pijp. Our guide, Marieke, waved us over to a tiny table already set with coffee and these flaky saucijzenbroodjes. I burned my tongue (classic me) because I couldn’t wait for it to cool down. The baker’s son explained how his grandfather started the place after the war. There was flour dust everywhere, even on his shoes.

We wandered out into Albert Cuyp Market just as vendors were shouting over each other, the cheese guy slicing samples of Gouda with a wire right onto wax paper. Marieke handed me a piece—smooth, kind of nutty—and told us how Dutch breakfast isn’t about big spreads but simple things done well. I tried to say “Gouda” like she did and got it completely wrong; she laughed but said I had “the spirit.” We stopped at a butcher who looked like he’d been there forever.
