Our driver, Hassan, was already waiting outside the riad when we came down, thermos of coffee in hand. The drive itself is about two hours, and Hassan used it to talk about Essaouira's fishing history, the way the wind shapes everything there, and why the medina still feels like it belongs to the people who live in it rather than to the tourists passing through. That kind of knowledge doesn't come from a script.

The stop at the women's cooperative was the part I didn't expect to matter as much as it did. You watch the women grinding argan nuts by hand (actually by hand, with a stone tool that's been used the same way for centuries), and suddenly the bottle of argan oil in your bathroom at home means something different. They showed us how they press it, how they know when it's ready, and one woman, Fatima, let us try grinding a handful ourselves. We were terrible at it.
