What’s the experience like?

You know that feeling when you walk into someone’s home and instantly smell something you can’t quite name? That’s how our Agadir food tour started. Our guide, Yassine, met us outside a little bakery where the air was thick with warm bread and something sweet — maybe honey? He handed me a briouat (I still don’t know how to say it right), flaky and stuffed with almonds. We ate standing on the curb while he explained why Moroccans love street snacks. I liked that he didn’t rush us — just let us nibble and wander.

After a few stops (the sardines shermoula were my favorite — salty, herby, messy fingers), we ended up at Yassine’s family apartment. His mother greeted us like old friends. The kitchen was loud with clinking spoons and bursts of laughter in Darija. I tried to help but mostly got shooed away to sit down. The refissa came out first: chicken buried under layers of msemen bread, the kind you tear apart with your hands. I remember the steam hitting my face — cinnamon and saffron, maybe? Hard to describe but it stuck to my clothes for hours.

I thought I’d be full after harira soup but then came mrouzia — beef slow-cooked with prunes and almonds. Sweet and savory at the same time. Yassine told us every dish had its own story; his mom would chime in now and then, correcting him or laughing when he mixed up dates. We finished with mint tea poured high from the pot (I spilled mine all over the saucer). Someone asked about recipes but his mom just winked — “family secrets,” she said.

By the end I felt more like a guest than a tourist. It’s not just about eating (though honestly, come hungry). It’s sitting on their couch hearing about Eid traditions or watching cousins drift in after work to grab a cookie.
