“You want the cave or the terrace?” That’s how our morning started outside Mexico City — not even 9am and already I had to choose between eating inside this wild, echoey volcanic cave or on a terrace with the pyramids just sitting there in the sun. We went for the cave (couldn’t resist), and it was cooler than I expected — literally cool, like you can feel stone under your palms. The coffee tasted different down there. Our guide, Ana, laughed when I tried to order chilaquiles with my rusty Spanish. She said it right for me and winked. There was this faint smell of earth and tortillas in the air — honestly, I still think about that breakfast sometimes.

After we’d stuffed ourselves (I ate too much pan dulce but no regrets), Ana led us out past early vendors setting up their stalls.
