Stone-mill your own matcha in a historic Takayama tea shop

Learn to grind and whisk matcha at a traditional tea shop in Takayama, where you'll mill tencha leaves by hand on a stone mill, whisk the powder with a bamboo whisk, and compare freshly ground matcha against shop matcha in a tasting. The class runs about an hour, includes Japanese sweets and a souvenir, and skips formal ceremony rules so you can focus on the flavor and aroma. A live guide speaks English or Japanese, and the shop offers both tatami and chair seating.

The experience

You arrive at a historic tea shop in Takayama and spend the first twenty minutes grinding tencha leaves on a traditional stone mill: one person at a time, taking turns. The mill is small enough that you feel the texture of the leaves breaking down under the stone, and the aroma starts to shift as you work. After milling, you move to whisking: you hold a bamboo whisk (chasen) and work the powder into a frothy bowl of hot water, learning the rhythm that keeps the matcha smooth instead of lumpy.

The tasting is where the lesson lands. You'll taste freshly milled matcha, the one you just ground, served in small cups shared among your group, then each person gets a full bowl of the shop's matcha to compare. The difference is immediate: the fresh version has a brighter, more grassy note, while the shop version tastes smoother and more mellow. Japanese sweets arrive alongside the bowls. The whole class runs about an hour and leaves you with a small souvenir to take back.

The shop provides guidance in English or Japanese, and uses a translation app if needed. Seating is flexible. You can sit on tatami mats or in a regular chair, though if you're bringing a baby or small child, strollers aren't allowed on the mats. Groups of three or more can book with advance notice.

Top questions

What languages is the tour guided in?

Live guide in English and Japanese.

I'm visiting Takayama for an afternoon, how long does the matcha class take?

The class runs about an hour from start to finish, covering the milling, whisking and tasting all in one session.

Do I need to know how to whisk matcha before I arrive?

No. You'll learn to whisk during the class itself, and the guide shows you the technique with the bamboo whisk so the matcha comes out smooth.

What's the difference between the freshly ground matcha and the shop matcha we taste?

Freshly milled matcha has a brighter, grassier flavor because the leaves are ground right before whisking, while shop matcha (which has been stored) tastes smoother and more mellow. The tasting lets you experience both side by side.

Is the class formal, or can I just relax and enjoy it?

It's designed to be casual. You'll learn the real techniques, but without the strict rules of a formal tea ceremony, so you can focus on the aroma and flavor instead.

What happens if I'm traveling with young children?

Infants and small children can come along. Strollers are allowed in the shop area, but if you want to sit on tatami mats, you'll need to hold your child since strollers can't go on the mats. Chair seating is also available.
