The Experience

Nishiki Market fills a long indoor corridor in central Kyoto, packed with vendors selling seasonal produce, Kyoto specialties, knives and cookware—the kind of place where a solo visitor can spend an hour without eating anything or understanding what they're looking at. A guide changes that. Your guide meets you at the market entrance and walks you through the stalls, stopping to taste yuba sashimi (tofu skin) and a soy milk donut at one vendor, then gyoza and tempura at others. The tastings are included; you're not buying them separately at each stop. Between tastings, the guide explains what makes each ingredient or dish particular to Kyoto, and points out which shops have been run by the same family for generations.

Before the market, you start at a Depachika—a basement food hall inside a department store—where the guide introduces you to rows of prepared dishes, sweets and gourmet items. It's a smaller, less overwhelming version of what Nishiki offers, and it sets up the flavors and categories you'll see again in the market itself.
