The experience

Tenute Girolamo sits in the heart of the Itria Valley, where the tour begins with a guided walk through the winemaking and aging processes. The real draw is the barrel cellar: a silent, underground space 18 meters down where the wine rests in oak barrels and refines its character. You'll taste seven wines, including the estate's Premium labels Conte Giangirolamo and Argese, each one paired at the table with Apulian cured meats and cheeses, plus olives, focaccia and taralli.

The tasting is built around a light lunch of local specialties, so the food and wine move together rather than one after the other. All of it (the guide, the cellar access, the seven tastings, and the full spread of food) is included in the price. The tour takes three hours and is wheelchair accessible. A live guide leads in English or Italian, depending on the group.
