The experience

I’d never realized how quiet an olive grove could be until we rolled out of Montalbano that morning. The air felt thick with the smell of earth and something green, maybe wild fennel? Our guide, Paolo, waved us off the main road and onto this old stretch of the Traiana. He told us it once ran all the way to Brindisi when Rome was still Rome. Later we rode through fields where some of the olive trees must’ve been older than anyone I know. Gnarled trunks twisting up from red soil: Paolo said some are over 800 years old. We tasted fresh extra virgin olive oil at a modern mill (that peppery bite at the back of your throat, I didn’t expect that). Li laughed when I tried to say “olio extravergine” in Italian, probably butchered it. The sun was out by then but there was still a breeze from the coast, carrying this salty tang you only get near the Adriatic.

I keep thinking about those silent moments between stops: the crunch of gravel under our bikes, birds darting between branches, someone’s dog barking in the distance. It’s not just about cycling or even olive oil. It’s something slower and quieter than that. You just sort of settle into it after a while.
