The experience

You arrive in Bari with a free afternoon and no plan to eat. This tour solves that: a private guide meets you in the Old Town and walks you through the labyrinthine streets, stopping to taste what locals actually buy from street vendors. Focaccia barese (the flatbread Bari is known for) comes first, and the guide shows you how to spot the best one and eat it the way residents do. Then panzerotto, a half-moon pastry filled with tomato and mozzarella; crunchy polenta flakes called sgagliozze; and gelato to finish. These are not plated courses in a restaurant. You eat standing up, moving between stops, learning the names and the history of each thing as you go.

The route threads past St. Nicholas Basilica, where the saint's relics sit in the crypt and his legend became the modern Father Christmas; the Swabian Castle, which holds plaster cast collections and temporary art exhibitions; and Piazza del Ferrarese, the old market square where a stretch of the ancient Roman road Via Appia–Traiana came to light during recent restoration. The cathedral, seat of the Archbishop of Bari-Bitonto, sits along the walk too, with its underground Roman walls called the Succorpo. You see these landmarks as part of the neighborhood, not as separate stops on a checklist. The guide's job is to connect the food to the place: why this street corner, why this particular pastry, what it means to the city.

The group stays small: you choose a private booking for two people, four, six, eight or up to ten. Wine tasting is included, along with water and a city map. Three hours is long enough to eat without rushing and short enough to fit an afternoon. If you have allergies or intolerances, tell the operator when you book so the guide can adjust the stops.
