The experience

Your afternoon starts with a private tour of Orvieto aboard the Orvieto Gran Tour electric bus. The multilingual audio guide takes you past the Cathedral and the architectural landmarks that define this Umbrian hilltop town. Once the tour ends, you're taken to Vis a Vis restaurant, where Chef Emanuele (who spent over a decade in haute cuisine kitchens across Italy), meets you and walks through the fundamentals of handmade pasta. You'll mix vegetable extracts and powders into dough to create colored sheets, then learn to roll, cut and cook each shape correctly. The whole setup is built around vegetable-based cooking: no meat, no fish, no eggs, only plant rennet cheeses and seasonal produce from the region.

You make fettuccine and stuffed ravioli, then sit down to eat them with the other guests in the class. A welcome aperitif arrives first, followed by the two pasta dishes you prepared, then dessert. Local oils and wines are tasted throughout, all in a relaxed, intimate setting. The chef guides each step, but the work is yours. You're not watching a demonstration. Four hours covers the bus tour, the cooking instruction, and the meal.
