The experience

Three hours in a Cesarina's home in Asti means you arrive, tie on an apron and start rolling 'sfoglia', the fresh pasta dough, by hand. Your host teaches you how to shape two different pasta types: one filled, one fresh, both made from scratch. The work is hands-on. You're not watching a demo. After the pasta comes tiramisu, the iconic dessert that closes the meal. Everything you make, you taste.

The class opens with an Italian aperitivo (prosecco and nibbles), so you're not jumping straight into work. Water, wine and coffee flow throughout. A Cesarina is a home cook from Le Cesarine, Italy's oldest network of culinary hosts who open their own kitchens to travelers. They teach family recipes, not restaurant techniques, and the group tops out at 12 so there's room to move and ask questions. The homes have the sanitary basics on hand. Public transport runs nearby if you need it.
