The experience

The morning or afternoon starts at the vibrant local market and traditional food shops of Viareggio, where your Cesarina guides you through what's fresh, what's in season, and what goes into the dishes you'll cook. This is not a tour of the market. It's a working shopping trip where you pick ingredients alongside someone who cooks this way every day. You'll carry what you've bought back to her home, a carefully selected private residence in Viareggio or the surrounding area.

In her kitchen, you get your own workstation equipped with utensils and all the ingredients laid out. Over the next few hours, the Cesarina walks you through three authentic regional recipes, revealing the tricks that make them work: the timing, the technique, the small moves that separate a dish made right from one that is just made. This is hands-on: you're doing the cooking, not watching a demonstration. You'll have a glass of local wine while you work, and when everything is ready, you sit down together to taste what you've prepared, accompanied by a selection of local wines, beverages and coffee.

Le Cesarine is Italy's oldest network of home cooks, operating in more than 120 cities. Each Cesarina opens her own home and teaches from her own kitchen, so no two classes are identical.
