The experience
You arrive in Anjuna with a free afternoon and no plans to cook, or you've eaten Indian food a hundred times and want to know how it actually gets made. This class puts you in a village kitchen behind the main market bustle, working alongside local women who run the cooking program. Over three hours, you'll learn to make chapati, poha, daal, bhaji masala, Goan coconut curry and rice, using the aromatic spices that define southern Indian cooking and understanding their ayurvedic properties as you go. Everything is vegetarian and made with local ingredients and mineral water.
The setup is traditional: you'll sit on the floor to cook, and the women will show you their methods as you work. If you need a chair, just ask. This isn't a demonstration where you watch from the side. You're making the food, learning the techniques, and tasting what you've cooked as dinner at the end. The class is still evolving. Project Tres runs it as part of a women's economic development project in India and Kenya, so the experience is genuine and the women are invested in teaching you well.
Bring an openness to cultural differences in cooking methods and ingredients. If you have dietary restrictions or food allergies, let them know when you book. Public transportation runs near the village, so you don't need a car to get there. The class takes about three hours total, and you leave with the recipes, the skills, and the memory of cooking in someone else's kitchen.
