The experience

Anita's grandmother spent 40 years in Indochina during French colonization, where she learned to cook French, Vietnamese and Cambodian food. When she moved to Pondicherry, she adapted those techniques to local Portuguese and Tamil ingredients, creating the fusion dishes Pushpa now teaches. In your class, you'll work in their home kitchen learning three of these dishes from scratch. The kind of food you won't find in restaurants because it's rooted in one family's culinary history across continents.

If you choose the market tour option, you start by walking to the neighborhood market with Anita, where farmers sell seasonal produce. You'll learn which vegetables, herbs and fruits go into Pondicherry cooking, then buy a few ingredients yourself before heading back to the kitchen. Without the market option, you go straight to the home and begin cooking. Either way, the class runs three hours total, and you eat the meal you've made at the end.

Anita and Pushpa can adjust for dietary needs: lactose-free, gluten-free, vegetarian and vegan diets are all possible with advance notice. The menu shifts with the season, so what you cook depends on what's fresh. You'll choose your option at checkout: market tour plus cooking and lunch; cooking and lunch only; or cooking and dinner instead.

What is Pondicherry's Creole cuisine, and where does it come from?

Pondicherry's Creole cuisine is a fusion shaped by French colonization, Vietnamese and Cambodian influences, and local Portuguese and Tamil traditions. Anita's grandmother learned French, Vietnamese and Cambodian cooking during 40 years in Indochina, then adapted those techniques when she moved to Pondicherry, blending them with what was available locally. If you choose cooking without the market tour, you start directly in the kitchen.
