The drive from Quito to Mindo takes about two hours, but it’s not the kind of ride where you’ll want to nap. Our guide, Andrés, pointed out tiny villages tucked into the green hills. By the time we reached Mindo, I’d already spotted a few bright wings darting past the car window.

Mindo is famous for its hummingbirds—honestly, I lost count after seeing so many colors flash by. We stood quietly on a shaded path while Andrés named each bird: cockerels, golden-headed quetzals (he got excited when one landed nearby), Andean toucans with their odd calls. There’s something about hearing local guides talk about “their” birds that makes it stick. The forest itself buzzes with life; sometimes you catch a whiff of wildflowers or see a butterfly land right on your sleeve.

Later, we visited Yumbos Chocolate. It’s not some big factory—more like a cozy workshop with the smell of roasting cacao beans drifting outside. We watched how they grind and mix everything by hand. Tasting the chocolate at the end was nothing like what I’ve had back home—richer, almost fruity. The owner told us their beans are recognized worldwide, which made sense after that first bite.
