The experience
You start at your Xi'an hotel, where your English-speaking guide meets you and you travel by taxi to a local family's home. Once there, a local teacher walks you through making dumplings from scratch: mixing flour and water into a paste, preparing the stuffing, rolling the skins, and shaping each one. The guide translates as you work, so you understand each step. While you're learning the dumpling technique, you'll also help prepare a hearty main dish. The menu rotates daily and might include mapo tofu, steamed fish, or stewed chicken with potato.
All equipment and ingredients are provided, so you don't bring anything except yourself. The class is set up in the family's kitchen, which means you're cooking in the actual space where the family prepares meals. After you finish cooking, you sit at the family table and eat everything you've made, along with local beer, soft drinks and fruit. The whole experience (market, cooking, eating) takes about 4 hours.
Closed-toe walking shoes are recommended for the market portion. The menu is set each day and includes at least one vegetarian dish, so if you have dietary preferences, confirm with the operator when you book.
